When we first opened.
Minted began in 2020 as a pop-up on Byres Road, serving ice cream from a shop that was still finding its feet. We opened as a servery first, because that was all that was possible at the time. The tables came later.
Byres Road has always been ice cream. It is part of the character of the street, and we wanted to carry that on. A parlour for people coming up from Hillhead, stepping off the subway, or simply passing through the West End.
For the first couple of years we sold ice cream we were proud to put our name to. In 2022, once the city had begun to settle after COVID, we started making it ourselves. From that point on, every scoop has been ours.
Every morning we pasteurise our own mix of milk, cream and sugar before the doors open. It is made in small batches, here in the shop, with nothing added that does not need to be there. The flavours change with the season and with whatever we are excited to try. Some stay. Some disappear by the afternoon.
Six years on, we feel part of the West End. Two refurbs, thousands of scoops, and the same door at 262 Byres Road.
